Oreo cookies are as American as apple pie, and combined with peanut butter and brownie mix, they make a truly decadent dessert. This crowd-pleasing recipe is easy to make and takes about a half hour to prepare from start to finish.

Cake:
1/2 cup butter
1 cup granulated sugar
2 eggs, beaten
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup flour
1/4 tsp salt
1/4 tsp baking powder
Cookie topping:
32 Oreo cookies
3/4 cup peanut butter, creamy or nutty
Steps
Make the brownies
1 Preheat your oven to 350°F (180°C). Line the muffin cup baking pans with 16 paper liners.
2 Melt the butter in a large saucepan.
3 Remove the pan from the stove.
4 Stir in the sugar, eggs and vanilla with a large wooden spoon.
5 Add the cocoa, flour, salt and baking powder, beating well after each addition.
Assemble the Oreo cakes and bake
1 Spread 1 teaspoon of peanut butter on one Oreo cookie.
2 Place another Oreo cookie on top of the peanut butter.
3 Put the double-stacked cookie into a muffin cup.
4 Prepare the other cookies in the same way.
5 Spoon about 2 tablespoons of the brownie batter over each stacked Oreo. Allow the batter to run down the sides of the stacked cookies.
6 Bake the cakes for 18 to 20 minutes until the brownie mix is cooked through.
7 Let the cookies cool completely before serving.
8 Finished.
Tips
If you have leftover brownie batter, bake it separately in a cake pan or a muffin tin.
Organic peanut butter may be harder to spread on the cookies because it is usually not as creamy as non-organic varieties.
If you don’t have cupcake paper liners, you can grease the muffin cups with butter, but the cakes may be difficult to remove after they are baked.
Warnings
These cookie cakes are extremely rich; you may want to cut them in half before serving. Use a serrated bread knife for easier cutting.
